Let me start by saying, I don't particularly like pancakes & waffles. I know, I know it's almost unAmerican. But, here's the thing, I make them all the time for the kids. They are so thick & heavy and covered in butter & syrup-yuck. I'm a pretty good cook and I just can't get it right. I order them in restaurants and it's the same thing-so much dough, just ...so much dough... yuck.On the other hand, you probably LOVE pancakes & waffles. You've got your old favorite recipe you've made forever, and it's great. You make them all the time, your kids love them, you make them for your significant other on special occasions and it's pretty wonderful in your part of the pancake/waffle world, right?WRONG. Until you make your pancakes & waffles from Carbon's Golden Malted Pancake & Waffle Flour-you have NOT had a good pancake/waffle. I'm not kidding here, people. I don't like pancakes/waffles but I LOVE LOVE LOVE them made with this flour. It has the best taste-probably the 'golden malted' thing. I'm guessing here, since I don't know diddly-squat about flour!We made pancakes & Belgian waffles using the recipe on the can, that's right-the RECIPE IS ON THE CAN! Follow it exactly and get ready for light, fluffy and delicious. Only a little butter & a tough of syrup needed-no need to weigh these circles of pancakey love down with that mess; just a light touch and eat until you can't walk.Now I get it-why you people eat pancakes all the time. And it only took one little can from Carbon's to show me the light. See the light, folks, buy a can and change your life!!Have you wondered (or are you still wondering) why the hotel's waffle mix tastes so good, and it seems like you have a hard time replicating the recipe with the waffle mix you got from the grocery stores ?Well, I have and it was baffling! I didn't give up on my wish to be able to make the YUMMIEST waffle at my own kitchen.I went to Amazon.com and encountered this product "Golden Malted" Waffle mix. First, if you have tried Carbon's and liked it, this is the most economical way to go; a while back I had to buy some directly through the company (Amazon was out of it), and I paid about the same amount for much less of the product (three tins but quantity was much less in each one). Now, when you go to hotels and get this product in their super duper waffle makers, it is first rate. When you try to use it in your little home waffle maker, it isn't as good. (I finally found one waffle maker (Waring) that produces a pretty good waffle. The trick seems to be the intense high heat that you can only get from the 240 current that you don't usually have at home. Anyway, this is a very good waffle mix (yeah, I know you can make pretty good pancakes with it too); the directions are simple; you just add some milk, egg, and butter in the quantities it directs you to use. One trick I learned a while back (in my sourdough recipe) is to separate the eggs and put the yolks in; then take the whites and whip them up to like a meringue (lots of air in it--I put in a bit of cream of tartar), then mix that into the batter. It makes the batter much lighter, and the waffles then are lighter and more airy. Another trick is to use buttermilk; I think that makes them a little better too. There's another good mix on the market called Garvey's authentic organic pancake & waffle mix, but it is quite expensive compared to Carbon's (see my review of that one for a comparison). Hopefully this review gives you food for thought (a little pun for you).I bought these really for the waffles. They are very good, better than the usual store bought mixes like A.J. I never planned on using it for pancakes, but gave it a shot one day when I ran out of my Cracker Barrel mix. Unreal! The pancakes taste more like cakes than pancakes, so thick and flavorful! I'm assuming the famous restaurant "Sunday in Brooklyn" must use this since it tastes just like their signature pancakes, which i can now make at home. I have to admit I still use the cheap regular pancake mix 2/3 of the time, since it's much cheaper (the main drawback to this product!), and not every time that i make pancakes do i want a cake - sometimes I just want a thin cheap pancake.Oh yeah, and the waffles ARE good - not a huge improvement over Krusteaz (which is my fall back), but the malt is somewhat tastier.
