Let me preface this review first: I cook, bake, do a lot in the kitchen and know my way around small and big appliances. I visit Hong Kong quite frequently and have the most authentic "bubble waffle" (鷄蛋仔) as it is normally served. Using this machine to make something decent requires some effort, and finding or coming up with a batter recipe that suits your tastes. The mold itself if a bit smaller than what you would get if buying the waffles off the street. The recipe that comes with the machine lends itself to softer waffles, and a little short on the custard powder. Plenty of recipes online and on youtube from local HK residents, or if you prefer, from US based food bloggers. It's getting popular and plenty of reading material on how to make it.Using it: Your first few tries will not be successful but don't give up. Gotta wait for the thing to warm to operating temp. Cooking spray is a must use. (The non-stick is just for show, and its just there waiting to peel). It'll take a little finesse to pour the batter in and spread it out evenly before it cooks and solidifies. Make sure you only fill it 1/2 to 2/3 full on one side. I like mine crispier, so I use less batter. Your choice, though if you go over 2/3 it will overflow when it expands. Make sure you pout it onto the side with the small lip that surrounds the bubble. It will help keep the batter from overflowing the sides. ( see picture, bottom half) You gotta pick up the whole machine and tilt it around until the batter is filled in all the individual bubbles. Once it's spread you have to flip it, then let it cook to your desired level. Wipe any batter that leak out onto the side of the machine before it dries. If you used the cooking spray, it should come out pretty easily with a little help. I used bamboo chopsticks, never use metal utensils on this surface. You may be able to use some other heat resistant utensils. Must do: Put the waffle on a cooling rack for a few minutes or else it won't crisp up.Clean it like you would a George Foreman grill-I wipe it down with damp paper towel. You may have to scrape batter from the sides of the machine if you didn't wipe it when it happened. Take your time, don't put this under running water. There are lots of crevices where water can enter and get underneath the cooking plates and onto the heating element.Thoughts: I wish this had an adjustable temp control, removable plates for easier cleaning, and better quality on the non-stick coating. There are spots on this where you can see specks from production. I'm super ginger when handling it, hoping it can last a couple more times. I also wish the bubbles are a bit bigger, as that will yield crispier waffles due to larger cooking surface and thinner more spread out batter.Like I said earlier, some practice, finesse, and tinkering with recipe and procedures, you can have some fun making the bubble waffles at home. For the price it does what it needs to and pretty well. Can't comment on longevity as I've used it only a handful of times.I have never written quite a review like this, probably will not again, so if this even helps one person then it's worth it for me.
