The brown sugar maple flavor is sublte, I prefer a little more but honestly I simply added some pure maple syrup to a batch and then it was perfect for me. I like that it's subtle and I can adjust up because if it was overpowering reducing it is harder. Everyone in the family loves the breakfast sausage I made with these.
