This mini ravioli tray works great, and was pretty much what I expected. The price isn't cheap for what you get, but it does work and make small ravioli a bit easier and more efficient. I bought it to make manti, a very small Turkish dumpling, and roll out my dough to a 7 on my Atlas Marcato pasta roller (0-9 setting model) and it does a great job.The bad reviews you see for this are solely based on it being smaller than expected, but it does function well, so don't let that sway you if you are looking for very small dumplings/ravioli. The very exterior of the squares are about an inch with the ribbed edging, but the interiors that you fill are beveled inwards, and the part that you can actually fill is approximately 1/3 of an inch at it's smallest and bevels out towards the top up to about 1/2" at the highest point, allowing you to fit filling approximately the size of a pea to a small chickpea, so keep that in mind. The decorative, ribbed edges do a great job of cutting the exterior edges and as long as you flour the tray or use non-stick spray it is easy to remove finished ravioli without having trouble or torn dough. Even without flour, you can peel them out without too much trouble, but a good dusting of flour before starting makes it much easier and they fall out in one cascading sheet mostly from their own weight once you get them going. The mini rolling pin works fine for cutting the edges as well. Once the entire sheet comes out, I did find it easier to go over the lines again with a ravioli wheel to separate all of the individual ravioli as the interior lines aren't cut deep enough to fully separate themselves, I found. I tried freezing them to break them apart and that worked ok, but I found it quicker to just use a ravioli wheel.The only the thing I wish it had that it doesn't is a dimpler, or plastic tray shaped like the metal tray that you could gently press onto the first sheet of dough so that it would form the indentations all at once to make it quicker and easier to fill. As is, you have to press your fingers into the indentations after putting your first layer of pasta dough down to form the little pockets and then fill them manually and it needs to be done somewhat delicately (and preferably without long fingernails to avoid puncturing/tearing)Overall, i've made about a dozen trays worth or 500 manti with this thing and have got the hang of it and am happy with it's performance.I was not able to use it at all. It has very very tiny ravioli spaces that it is impossible to fill the inside.Missed the size of the ravioli this would make in the description and they seem even smaller than 1 inch in person.Arrived as promised.
